1. Kalua Pig (Oven-Style)
This home-style version of imu-cooked kalua pig delivers smoky, salty flavor without the underground oven.
- 3–4 lb pork shoulder (pork butt)
- 1 tbsp liquid smoke (mesquite)
- 1–1.5 tbsp Haleiwa flake salt
- Optional: banana leaf or ti leaf
Directions: Preheat oven to 300°F. Rub pork with flake salt and liquid smoke. Wrap tightly in foil or place in a roasting pan covered with banana or ti leaf (preferably both) and foil. Roast for 4–5 hours until tender and shreddable. Shred with forks and mix in pan juices. Add more flake salt to taste.
2. Pan-Seared Kajiki with Citrus & Salt
Simple and elegant, this dish lets fresh kajiki (Pacific blue marlin) and sea salt do the talking.
- 2 kajiki or marlin steaks
- 1 tbsp olive oil

- 1 pint shishito peppers
- 1 tbsp avocado or olive oil
- 1/2 tsp Haleiwa flake salt (plus more for finishing)
- Juice of 1/2 grilled lemon
- Pinch of sesame seeds
Directions: Heat oil in a pan over high heat until nearly smoking. Toss in peppers and cook for 4–5 minutes, turning occasionally, until blistered and slightly charred. Squeeze grilled lemon juice over, then sprinkle generously with flake salt and sesame seeds. Serve immediately.
4. ʻUlu Chips

- 1 medium ʻulu, peeled and thinly sliced
